This past weekend I went to Austin,TX to watch my first F1 race with my family and let’s just say my boys absolutely loved it! Wow! Such a fun experience 🏎️ so much excitement!

My boys also attended their first 2 concerts! We were lucky enough to see Sting perform and also Eminem! Definitely brought back memories from childhood singing along the songs and let me just say my boys thought their mama was too crazy 🤣 I never thought my kids would be attending concerts with artists that I used to listen to at their age 🤩

I also had tons of fun quality girl time with my beautiful soul sister @mycherie__ 💗 We have been friends for…let’s just say an entire lifetime! 💃🤣 When we get together, it’s as if we’re back to being 21. We danced like no one was watching us, we ate like food had no calories 🫣, and we relaxed like we had no responsibilities. Sometimes that’s all that is needed, is some good quality girl time to get back into mama life 💃

I also got to see @ericabalbay which I haven’t seen in ages!! 🤗 the universe brought us back together even after all these years! 💃😍

Also, had a lovely night out with @courtneyperna 💗 Vegas girls! We can leave Vegas, but Vegas girls always find each other 😆

Liquid gold (chicken broth) 🧑‍🍳

1 rotisserie chicken (remove all the meat and save for later use, throw the carcass into your pressure cooker)

1 onion, cut in 1/4

4 large carrots, cleaned and cut in 1/3

3 large celery sticks, cut in 1/3

2 bay leaves

2 tsp whole peppercorns

4 fresh thyme sprigs (and any other fresh herbs you may have)

4 cups water

*skip on adding any salt if you’re rotisserie chicken is already salted

Pressure cook on High for 1 hour. Strain and enjoy!

Vegan Pistachio Pesto:

1/2 cup fresh basil
Bunch of fresh cilantro
Bunch of fresh Parsley
1/4 cup toasted pistachios
1/2 lemon juice (or more if you wish)
1/4 tsp chili flakes (or more if you want spicy)
2 Tbsp red wine vinegar
1/4 cup olive oil
S+P (to taste)

Add all ingredients in a mixer and mix for about 1 minutes.

Easy, healthy, and Delicious!

Remember to play with your food, contrary to what your mother told you growing up 😉 There are no rules to cooking, so have fun with it!

Potato Au Gratin

Servings: about 2-3

Ingredients:

-3 medium sized potatoes, thinly sliced (you can cut by hand or use a mandoline)
-3 Tbsp salted butter
-1 Tsp fresh sage, thinly sliced
-3 garlic cloves, minced
-1 oz freshly shredded Parmesan cheese
-2 oz shredded mozzarella
-1/2 cup milk/ or heavy cream (I ran out of heavy cream so I used regular milk and it came out delicious)
-1/2 tsp salt
-1/2 tsp black pepper

Directions:

*Preheat oven to 450°

In a small sauce pan, add your milk (or heavy cream if using), butter, minced garlic, chopped fresh sage, s+p and mix for 1-2 minute until all the butter is melted and the milk has started to simmer. Turn off heat.

Spray your baking dish with butter or olive oil.

Add 1 layer of potato rounds, 2-3 Tbsp of milk mixture, some Parmesan and mozzarella. Repeat this process.

Before adding cheese on the last layer, salt and pepper the potatoes and add the rest of the cheese.

Bake at 450° for about 30 minutes or until the potatoes are fork tender.
