Easy Chicken Soup

This soup will become your favorite soup. Even my children approve!




Ingredients:


  • 10 cups of water

  • 2 sticks of celery

  • 1 cup of chopped carrots

  • 1 whole chopped yellow onion

  • 6 small potatoes (any kind you like)

  • 4 tomatoes (whichever ones you like)

  • 3 sprigs of scallion, chopped (green onion)

  • 1/3 chopped parsley

  • handful of chopped fresh dill

  • 2 chopped bell peppers (any ones you choose)

  • 1 - 1/2 lbs of chicken breast cut up in cubes

  • 2 bay leaves

  • 4 chicken drumsticks (with bone and skin)

  • 1 lemon juiced

  • Vegeta All Purpose Seasoning 2 Tbs - or more if you prefer food more salty (You can find this seasoning at any European grocery store, or online)




1. Take a large pot out and add the 4 chicken drumsticks and 10 cups of water. Add salt and pepper and let boil for about an hour on high to medium heat. While the chicken is cooking, this is a good time to chop up all of your veggies (to make this part easier I like to buy veggies that are already chopped, but if you like to do it yourself you are welcome to do so).






2. As the chicken drumsticks are cooking you will see a foam building up on top of the water. Clean this out until there's no more of it. It will look like this:




3. After about 1 hour take out the drumsticks and add all the ingredients (just leave a bit of parsley to add at the end as garnish) to the pot and let cook for about 45 or so on medium-low heat covered. The longer it cooks, the better it tastes! If you have time, put it on slow heat and let it simmer for about 2 hours, and if you're short on time just let it cook on medium heat until all the veggies are fork tender.


***The bones of the chicken give a more flavorful taste to the chicken broth, which is why I recommend this step.***


***Quick tip:

You could also use store bought chicken stock and add all the ingredients to the pot all at once and let cook for about 45 minutes - 1 hour. This will alter the taste, but it will still be delicious!
