Fluffy chocolaty cake?? Yes Please! Recipe below...
Ingredients:
1/2 cup 70% Cacao chocolate chips
6 eggs (separate the egg whites and the egg yolks)
1 cup sugar
1 Tsp. vanilla extract
1/2 Tsp. salt
3 Tbs. butter
Turn on the oven to 350º F
1. Mix the egg whites until fluffy (foamy) in the mixer. Add 1/2 cup of the sugar to the egg whites.
2. Transfer the egg white mixture to a different bowl.
3. Add the egg yolk to the mixer bowl and beat with the rest of the sugar (1/2 cup) until it becomes pale yellow. After about 3 minutes in the mixer add salt and vanilla extract and beat for 1 more minute.
4.In the meantime, take a small pot and add 1 cup of water. Put a small bowl over the top of the pot and add all the butter and cacao until all melted on low heat.
5. Add the chocolate mixture to the egg yolk mixture and beat for 1 minute.
6. Take the bowl out of the mixer and add the egg white mixture in 3 batches at a time.
7. Fold in gently, DO NOT MIX or else you will lose the fluffiness.
8. Butter a spring form pan (if you do not have one, use a glass pan like I did).
9. Pour batter in the pan and bake at 350º F for about 40-45 minutes (until the top cracks).
10. Top with powdered sugar or serve with whipped cream and berries or ice cream, or whatever else your hungry tummy desires!
