Homemade Chicken Meatballs

My mama's chicken meatballs are so delicious and easy to make. They taste great warm or cold. Try out this recipe and let us know what you think!




INGREDIENTS:


*Feeds about 2-4 people* (I promise you will want to double, maybe even triple this recipe after you try them)


- 1 lb ground chicken

- 1 egg

- chopped 5 stems of scallions (green onion)

- handful of cut up fresh dill

- 1 minced garlic clove

- 3 pieces of bread (white)

- 1/3 cup of milk


Directions:


Turn the oven to 350º F



1. Add the bread in a bowl and pour the milk over until it is soaked all in.

2. Add the rest of the ingredients in a large bowl. Squeeze the excess milk out of the bread and add to the ground chicken mixture. Add salt and pepper as desired. Mix all together.

3. Prepare a large pan and cover with parchment paper.

4. Use a small ice cream scooper to make all the meatballs the same shape (this will help the meatballs cook evenly). Add the meatballs to the pan.

5. Drizzle with olive oil.

6. Bake for about 30 min. If you are not sure if they are ready use a food thermometer. (Internal temperature should be 165º F)
