Homemade Pomodoro Sauce (Vegetarian)

This rich tomato sauce is great on any pasta dish! You can use it for a homemade lasagna or a regular podomoro pasta. ( You could make this dish Vegan by using vegan butter instead of regular butter)




Ingridients:


20 roma tomatoes (or any other large tomatoes you prefer)

fresh basil

1-2 tbsp. of butter

garlic infused olive oil

salt

pepper


Directions:


Blanch the tomatoes. Peel the skin off the tomatoes and put the tomatoes in a saute pan. Turn on the stove on to medium-low heat. Take a potato masher (preferably a plastic one to not ruin your pan) and smash the tomatoes until it looks more like a sauce. Add salt and pepper to taste. Add a lid and let simmer for about 1 hour. Keep an eye on it and keep mixing it every so often.




While the tomatoes are cooking, make your garlic infused olive oil: Take about 1/4 cup of olive oil in a small pan and add about 6 garlic cloves (you don't need to peel them). Turn the heat to LOW and let simmer until the garlic turn to a light brown color. Turn off heat and let sit.


*When the tomatoes are done cooking turn off the heat and add the garlic infused olive oil, butter (optional, but brings a lot of flavor), and the fresh basil.


Enjoy this tasty tomato sauce on any pasta, pizza, or anything else you can think of!
