Honey Roasted Rainbow Carrots (Vegan, Vegetarian)

Delicious, healthy, and a guilt-free side dish!




Ingredients:


  • 8 large rainbow carrots (you can use regular carrots, or baby carrots)

  • 2 tbs olive oil

  • 1 tbs balsamic vinegar

  • 1 tbs honey

  • dried thyme

  • S+P


Preheat oven to 425º F


Directions:


  • you can use the carrots whole or cut them in halves so they cook faster

  • put the carrots on a pan with parchment paper

  • add the olive oil, balsamic vinegar, honey, thyme, S+P

  • mix the carrots with all the ingredients you just added and place the carrots flat on the pan

  • bake for 20-30 min ( I prefer mine to be a little more burnt so I bake mine for longer, it really depends on your taste preference)
