Try this healthy chicken thigh dish and i promise you won't regret it!
Ingredients:
8 skin on chicken thighs ( you could also use skinless).
1 Lemon (I like to use 2 whole lemons because I just love the strong lemon flavor)
Olive oil
2 tbsp salted butter
1/4 cup chopped parsley
S+P
Preheat oven to 400º F
Directions:
Prepare a cast iron skillet and put it on the stove top over high heat until very hot. (You can check the temperature by splashing some water into the skillet and if it sizzles you know it's ready!)
Add some oli oil so the chicken doesn't stick too much.
Salt and pepper the chicken thighs on one side. Place the salted and pepper side onto the hot skillet. Don't over crowd the pan (do 3 or 4 at a time). Cook until browned, for about 1-2 minutes.
Salt and pepper the other side and flip over. Brown again for about 1-2 minutes. Place aside on a different plate and finish cooking the rest of the chicken thighs.
Turn the heat off and put all the chicken thighs into the cast iron skillet.
Cut lemon in half and squeeze out the juice. Put the juiced lemon halves in the skillet with the chicken.
Cut the 2 tbsp of butter into 4-6 pieces and place around the chicken.
Add half the chopped parsley.
Bake for 25-30 min (It is recommended that dark meats be cooked on at least 175º F, but i personally take them out of the oven at 165º F and let rest covered. While they rest they continue to cook so it most defintely will reach the recommended tempterature.)
Take out of oven when finished cooking and cover with foil. Let rest while you prepare other things for your meal.
Before serving garnish with the rest of the chopped parsley and serve straight out of the cast iron.
