Pavlova is a traditional Kiwi dessert. Fun fact: people from New Zealand are known as Kiwis, not the fruit, but the bird :)
Ingredients:
8 egg whites
1/4 tsp. salt
6 tsp. corn flour
2 tsp. white vinegar
2 tsp. vanilla extract
2 cups of sugar (caster)
3 tbs. water
Directions:
Preheat oven to 350 Degrees F
Beat egg whites until very fluffy.
Add the sugar gradually while beating the egg whites.
Add the remaining of the ingredients (1/4 tsp. salt, 6 tsp. corn flour, 2 tsp. white vinegar, 2 tsp. vanilla extract, 3 tbsp. water)
Prepare a sponge tin and add parchment paper to the bottom of the tin.
Add the mixture to the sponge tin.
Bake for 10 minutes at 350 degrees F.
Reduce oven heat to 300 degree F. and bake for another 35-40 minutes.
Take out of the oven and let cool completely.
Topping for the Pavlova:
Ingredients:
250 grams of heavy cream
2 tsps of powdered sugar
1/2 tsp vanilla extract
Fresh fruit (strawberries, blueberries, gooseberries, kiwi fruit, etc.)
Directions:
Whip the heavy cream, 2 tsps. of powdered sugar, and 1/2 tsp. vanilla extract until it thickens.
Cover the Pavlova with the whipped cream and add any fruit you prefer on top.
