Pavlova

Pavlova is a traditional Kiwi dessert. Fun fact: people from New Zealand are known as Kiwis, not the fruit, but the bird :)





Ingredients:


  • 8 egg whites

  • 1/4 tsp. salt

  • 6 tsp. corn flour

  • 2 tsp. white vinegar

  • 2 tsp. vanilla extract

  • 2 cups of sugar (caster)

  • 3 tbs. water


Directions:


Preheat oven to 350 Degrees F


  • Beat egg whites until very fluffy.

  • Add the sugar gradually while beating the egg whites.

  • Add the remaining of the ingredients (1/4 tsp. salt, 6 tsp. corn flour, 2 tsp. white vinegar, 2 tsp. vanilla extract, 3 tbsp. water)

  • Prepare a sponge tin and add parchment paper to the bottom of the tin.

  • Add the mixture to the sponge tin.

  • Bake for 10 minutes at 350 degrees F.

  • Reduce oven heat to 300 degree F. and bake for another 35-40 minutes.

  • Take out of the oven and let cool completely.


Topping for the Pavlova:


Ingredients:


  • 250 grams of heavy cream

  • 2 tsps of powdered sugar

  • 1/2 tsp vanilla extract

  • Fresh fruit (strawberries, blueberries, gooseberries, kiwi fruit, etc.)


Directions:


  • Whip the heavy cream, 2 tsps. of powdered sugar, and 1/2 tsp. vanilla extract until it thickens.

  • Cover the Pavlova with the whipped cream and add any fruit you prefer on top.
