Puff pastry is tasty no matter what filling you decide to use really :) Try this easy savory recipe and let me know what you think!
Ingredients:
* Makes 5 pastries *
Puff pastry squares (10 squares per package, 5"x 5"size per square)
4 medium sized potatoes (peeled)
1 medium sized onion (chopped)
2 Tbs fresh dill (chopped)
1/4 cup flour or less (just used for the area you're working on so the dough doesn't stick to the surface)
1 Egg (for brushing on top of pastries to give it a more golden, crisp taste)
S + P
Thyme (just enough to sprinkle on top of the pastries)
Turn oven on 375 degrees F
-Prepare a pan with parchment paper-
Directions:
Filling:
Lightly flour the surface area you will be working on.
Lay out 5 squares of the puff pastry flat (leaving some space in between each one).
Use a mandoline and slice your potatoes round.
Then use a vegetable chopper to chop the potato rounds. Put in a large bowl.
Use the vegetable chopper to cut the onion and sautee until browned. Add to the bowl of potatoes.
Add the fresh dill to the potato mixture.
S+P to taste.
Mix all together.
In a separate small bowl whisk 1 egg and set it aside.
Putting it all together:
Add 4 Tbs of the potato filling per square. Fill all 5 of the squares you have prepared.
Take the other unused dough and place it on top of the dough with the filling.
Use a fork to press down the dough pieces together (this helps the dough stick together).
Place all the pastries on top of the prepared pan with the parchment paper.
Brush the whisked egg on top of each pastry.
Sprinkle some Thyme + salt lightly on top of each pastry
Bake for 25 min (when it reaches a golden color then it is finished)
