Gnocchi is actually very easy to make! Just pour yourself a glass of wine and enjoy the process...this would be a great meal to make with friends or even your kids :)
Ingredients:
About 6-8 boiled potatoes (peeled)
2-4 cups of all purpose flour
2 eggs
S+P
Directions:
Boil the potatoes peeled.
Rice the potato in a bowl (using a potato ricer).
Flour your surface area and add the riced potato and 2 cups of flour. In the middle of flour make a flat area and add the 2 eggs and S+P. Combine together until the dough stops sticking to your fingers. *Keep adding the remainder 1-2 cups of the flour a little at a time as needed until the dough stops sticking to your fingers (you might not use up all the flour so don't worry if you have some leftover).
Take aside about 2 inches of dough and roll into long pieces. Cut off into 1/2-1 inch dough pieces. Cover in flour and put on a tray with parchment paper.
Take a bit pot and boil water with salt (just like you would cook any other pastas).
Throw in a few gnocchi at a time in the hot boiling water and cook for about 2 minutes. Homemade pastas cook very quickly so keep an eye on it. Also if you are going to be mixing in the pasta with a homemade sauce, you might want to under cook the gnocchi just a bit because it will continue to cook in the sauce once you combine together.
