*This recipe makes about 12 mini tacos*
Ingredients:
Fully cooked 1/2 lb. medium sized shrimp (chopped)
1 large tomato
2 avocados (diced)
2 garlic cloves (chopped)
3 sprigs of parsley or cilantro (chopped)
3 limes (2 limes juiced, 1 for garnish)
Jimaca wraps
S+P
Directions:
In a bowl mix all the ingredients together, except for the jicama.
Place the Jicama on a serving place and fill each wrap with the shrimp ceviche.
Garnish with lime wedges.
