This stuffing has been a hit since I've made it for the first time about 6 years ago! I always make extra because it is the first thing to run out. It's also great for vegetarians to enjoy. I haven't tried making this dish vegan, but I'm sure it could easily become a vegan dish by replacing the regular butter with a vegan butter :)
Ingredients:
1 King's Hawaiian honey bread (cut in cubes)
1 stick butter (I prefer salted)
1 mirepoix from Trader Joe's ( or you can chop the veggies yourself)
1/2 bag Trader Joe's rosemary almonds (if you don't have a Trader Joe's near you just use sliced roasted almonds and dried rosemary)
1 large green apple (diced)
1/2 cup dried cranberries
1 case of dates (pitted)
2 eggs
1/2 vegetable stock
Preheat oven to 375º F
Directions:
Add butter to a hot pan on medium heat.
Add mirepoix and cook for a few minutes until the vegetables soften.
Add the diced green apple, dates, dried cranberries, and rosemary almonds.
S+P to taste.
Mix all together and let cook on low heat for 10-15 minutes. Keep mixing so the bottom doesn't burn.
Add the cubed bread to a baking dish.
Add the mixture, mix together, and let it cool completely.
Add the two eggs (mix in a separate bowl first).
Add 1/2 cup of the vegetable stock. ( You can add more stock if needed. You don't want it to have any liquid at the bottom, but just enough that everything is mixed and the bread is soft and gooey.)
Mix all together.
Bake for 20 min.
